While I was staying with my aunt and uncle before Bethany was born my aunt made beef enchiladas that were absolutely delicious! While I am not always a huge fan of beef enchiladas, these were delicious! Austin ate more than I did that night, so they were a hit with him as well. I knew I wanted to make them once we came home.
With a few slight adjustments these turned out amazing! Best part, they are so, so simple! These will be added to our regular meal rotation!
Cheesy Beef Enchilada Recipe
- 1 pound of Ground Beef
- 1 small onion, chopped or 1 tablespoon minced onion
- 2 garlic cloves or 2 teaspoons of minced garlic
- 2 teaspoon of chili powder
- 2 teaspoon of cumin powder
- 8-10 Tortillas
- 1-2 cups of shredded cheese
- 1 can of enchilada sauce or homemade enchilada sauce
Brown your ground beef with the onions and garlic. Once browned, drain off excess fat and oil.
Add 1/2 cup of water, chili and cumin powder. Cover and simmer on low heat 15 minutes.
Coat the bottom of your glass pans with a thin layer of enchilada sauce.
Brush the inside of each tortilla with a thin layer of enchilada sauce.
Add in a tablespoon of ground beef and 1-2 teaspoons of cheese.
Roll it up tightly and place it into the pan until they are full.
Brush the tops and sides of all the enchiladas with the remaining sauce.
Top with the remaining cheese.
Cover the pan with foil and bake at 350 degrees for 25-28 minutes, until the cheese is melted and slightly brown.
Enjoy plain or serve with sour cream, lettuce, olives and tomatoes.
Coating the inside and outside of the tortilla with the thin layer of enchilada sauce keeps it very moist. Even if you have another beef enchilada recipe you have to give this one a try, it is so simple and so delicious!
